Sapin-sapin is originated from the province of Abra, a place in the Northern part of the Philippines. Its name is derived from its appearance which is "layered". Sapin-sapin usually consists of three colors: the deep ube-like purple, golden yolk yellow, and just plain white. Sapin-sapin is made from rice flour, coconut milk, sugar, water, ube, corn kernels, and some coloring for the yellow and purple layers with coconut flakes sprinkled on top.
